Caracterização e potencialidades para o uso de Jaca (Artocarpus heterophyllus Lam.) no setor alimentício
Abstract
Jackfruit is considered the largest edible fruit consumed in the world. It is native to India, was introduced in Brazil by the Portuguese in the colonial period and easily adapted to the tropical climate. Among the most produced varieties are the hard jackfruit, the soft jackfruit and the butter jackfruit. As for the fruits, they are composed of infructescences of the syncarp type, in which each one covers a seed. They are rich in carbohydrates, minerals (calcium, phosphorus, iodine, copper and iron) and vitamins A, C and the B complex. This fruit can be consumed in the most different ways, such as fresh, cooked, sweets, jellies, juices, between others. As they are climacteric, they are endowed with a high perishability. Industrialization is an alternative for the best use and aggregation of income. Based on the assumption, this work aims to carry out a bibliographic review on the potentialities of jackfruit for use in the food sector, in order to be an alternative to reduce the accumulation of waste generated.
